|Ripe honeydew melon||4 Pound (1 Medium Sized)|
|Water||1 1/2 Cup (24 tbs)|
|Sugar||1/2 Cup (8 tbs)|
|Crystallized ginger||6 (1 Inch Squares)|
|Lemon||1/2 , quartered|
Halve melon lengthwise and scoop out seeds; remove rind and cut melon in bite-size cubes; place in a large mixing bowl.
Simmer water, uncovered, with sugar and ginger about 30 minutes, stirring occasionally.
Off heat, add lemon and cool to lukewarm.
Pour syrup and lemon over melon, toss to mix, cover, and chill 3-4 hours.
Remove lemon, spoon melon into stemmed goblets, and top with a little of the syrup.
