Raw Mediterranean Soup

This raw soup is extremely nutritious but is a little hard to swallow. The taste is distinct because it is specifically made for RAW foodies.


Filtered water 2 Cup (32 tbs)
Cucumber 1 Medium , diced
Celery stalks 3 Medium
Red pepper 1 Medium , diced (and seeded)
Avocado 1 , pitted and peeled
Oregano sprig 1
Thyme sprig 1
Jalapeno 1 Medium , dice
Lime 1 Medium , peeled (and halved)
Spinach 3 Cup (48 tbs)



1. In the vitamix combine the filtered water, cucumber, celery stalks, red pepper, oregano sprig, thyme sprig, jalapeno and lime.

2. Start off with speed 1 and slowly increase to speed 10 and then flip to high.

3. Blend for 10 second or until smooth to desired consistency.

4. Take off the lid and add the spinach, blend at speed 10 for 30 seconds.


5. Serve the Raw Mediterranean Soup immediately.


If using a blendtec press the manual button and take it to speed 10 and blend for 10 seconds.
