Couscous | 12 Ounce | |
Cooked chicken | 2 Cup (32 tbs) , diced | |
Orange juice | 2 Cup (32 tbs) | |
Fresh basil | 1/4 Cup (4 tbs) , chopped | |
Green onion | 2 , finely chopped | |
Salt | 1/2 Teaspoon | |
Pepper | 1/2 Teaspoon | |
Vegetables: | ||
Zucchini | 1 , chopped | |
Celery stalk | 1 , finely sliced | |
Carrot | 1 , peeled and grated |
MAKING
1. In a large bowl, combine couscous, chicken and the vegetables, set aside.
2. In a saucepan, boil orange juice over medium heat. Pour into the chicken - vegetable mixture. Cover with a plastic wrap and let it stand for 5 minutes.
3. Uncover, basil, green onion, salt and pepper, stir to mix.
SERVING
4. Serve with your choice of beverage.
TIPS
Bring orange juice to a boil in a saucepan over medium heat; stir into couscous mixture. Cover tightly with plastic wrap; let stand for 5 minutes. Stir gently until evenly mixed. Serves 4.
