Mediterranean Orange & Arugula Salad

This salad is so simple and easy to make! The light peppery flavors of the arugula combined with the sweetness of the oranges, red wine, and onions combine to make the healthiest and best tasting salad. Make, eat, and enjoy Juliana's salad creation!

Ingredients

Arugula leaves 3 Cup (48 tbs)
Orange 1 Large
Salt 1/2 Teaspoon
Cracked black pepper 1/2 Teaspoon
Red wine 1 Cup (16 tbs)
Olive oil 1 Tablespoon
Red onion 1 Medium , slice
Parsley 1 Tablespoon

Directions

GETTING READY

1.Peel de-seed and slice orange into roundels.

MAKING

2. Place the orange slices over arugula salad.

3. Slice onions and put it over arugula. Sprinkle salt and cracked black pepper over the salad.

4. Combine olive oil and red wine, whisk well. Drizzle over the salad. Toss lightly to coat arugula.

SERVING

5. Garnish with chopped parsley. Serve immediately or chill before serving.
