Mediterranean Fish Soup with White Beans's picture

Olive oil 1/4 Cup (4 tbs)
Onions 2 Large , chopped
Garlic 2 Clove (10 gm) , minced
Tomatoes 2 Cup (32 tbs) , chopped
Bay leaf 1 Teaspoon
Basil 1/2 Teaspoon
Thyme 1/2 Teaspoon
Grated orange peel 1 Teaspoon
Dried parsley 2 Tablespoon
Black pepper 1/2 Teaspoon
Cayenne pepper 1/2 Teaspoon
Water/Fish stock 6 Cup (96 tbs)
Cooked white beans 2 Cup (32 tbs)
Haddock fish/Mild white fish 1 Pound , cut into 1 inch pieces
Lemon juice 1/2 Cup (8 tbs)
Chopped parsley 1 Tablespoon (for garnish)



1. Put the kettle on heat and warm the olive oil.

2.Saute onions and garlic until soft

3.Now add the tomatoes, bay leaf ,thyme,basil,orange peel and parsley, pepper and cayenne pepper.

4.Pour the water or stock. Bring soup to a boil

5.Add the cooked beans, lemon juice and fish to the soup. Simmer for 10 minutes and check for seasoning

6.Adjust seasoning.


7.Sprinkle with parsley and serve.Leftover rice can be used in place of beans
