One Pot Moroccan Chicken is a delicious and easy weeknight dinner dish. Chicken Breasts are seasoned with a Moroccan spice mix, then browned. Baked with potatoes, chickpeas and tomatoes, this all-in-one meal is perfect for when you don't have a lot of time to make dinner - give it a go!

Moroccan spice mix | 2 Tablespoon ((Seasoning)) | |
Potatoes | 3 Large , peeled and roughly chopped | |
Canned chickpeas | 400 Gram , drained and rinsed ((1 can)) | |
Canned diced tomatoes | 800 Gram ((2 cans, 400g each)) | |
Olive oil | 3 Tablespoon | |
Salt | To Taste | |
Pepper | To Taste | |
Chopped parsley | 1 Teaspoon ((for garnish)) |
GETTING READY:
Preheat oven to 220°C.
MAKING:
Season chicken with Moroccan seasoning.
Heat a large pan with olive oil and brown chicken pieces in it.
Once done, transfer the chicken to a bowl.
In same pan, sauté potatoes and add garlic, chickpeas, diced tomatoes, salt and pepper.
Stir well and place chicken over it.
Cover with a lid and pop into oven.
Bake for 15-20 minutes.
Garnish with parsley.
