Sweet Potato Falafel - Simple Vegan Recipes

Ingredients

Garlic clove 1 Large , minced
Canned chick peas/Soaked and boiled chick peas 1 Can (10 oz) , drained and rinsed
Baked sweet potatoes 1 Large , peeled, cut into large pieces
Fresh parsley/Cilantro 2 Tablespoon , chopped finely
Cumin powder 1 Tablespoon
Sea salt 1 Teaspoon
Black pepper 1/2 Teaspoon

Directions

GETTING READY

1. Bake a large sweet potato

2. Soak chickpeas overnight and then cook till softened, if you wish to use fresh rather than canned.

3. Chop fresh parsley.

4. Measure and mix together all the powderedspices in a small bowl.

5. Pre-heat the oven to 350 F

MAKING

6. Place all the ingredients one by one - garlic, chickpeas, sweet potato, parsley and the spice mixture in the blender.

7. Pulse initially and then blend together to combine well.

8. Using a cookie scoop, place scoops of the mixture as equal intervals on a lined baking tray.

9. Place the tray in the pre-heated oven and bake for about 30 minutes.

SERVING

10. Serve immediately or store in an air-tight container for later.

This can be had with a little drizzle of tahini on top, salsa or any sauce of your choice.
