Mini Mexi Meatloaves

Big V is back with another hilarious (and delicious) installment of Secret Ingredient Cooking - today featuring the most delicious little meatloaf cups done in your muffin tin!

Ingredients

For meat mixture
Extra lean ground beef 1 Pound
Sea salt 1/2 Teaspoon
Garlic cloves 3 , mince
Finely chopped jalapeno peppers 1 Tablespoon
Salsa 1/2 Cup (8 tbs)
Crushed taco shells 1 Cup (16 tbs)
Shredded sharp cheddar cheese/Shredded jalapeno cheese 1/2 Cup (8 tbs)
Eggs 1 , lightly beaten
For potato topping
Russet potato 4 Medium , peeled and quartered, boiled
Butter 1 Tablespoon
Sour cream 1 Tablespoon
Chicken stock/Vegetable stock 2 Tablespoon
Corn niblets 1 Can (10 oz) , drained
Shredded sharp cheddar cheese 1/2 Cup (8 tbs)
Fresh cilantro 2 Tablespoon
Sea salt 1 Teaspoon

Directions

GETTING READY

1. Preheat oven to 350 degree F.

MAKING

For Meat Mixture:

2. In a large bowl, combine ground beef, salt, garlic, jalapeno, salsa, taco crumb, cheese, and egg. Mix well.

3.Using a third cup measure, place a third cup of the meat mixture at a time into a well oiled non-stick muffin tin and shape with your hands to flatten.

4. Pop in oven and bake for 25 minutes. Remove from oven and transfer meatloaf to a plate.

5. Drain off excess oil from the muffin tin, rinse, and pat dry with towel, and lightly grease with oil. Place the meatloaf back into the tin and set aside.

For Potato Topping:

6. Boil the potatoes in water with 1 teaspoon salt until fork tender. Drain well.

7. Into a bowl, mash the potatoes with butter, sour cream, and chicken soup stock until there is no lump.

8. Add corn and shredded cheese. Stir until potatoes are smooth and the cheese is melted.Fold in cilantro.

FINALIZING

9. Using the third cup measure again, place a third of a cup of potatoes onto each mini meatloaf.

10. Place under a pre-heated broiler for approximately 5 minutes or until the potato topping is golden.

SERVING

11. Serve and enjoy!
