Meal Prep Recipe: Buffalo Chicken Meatloaf Muffins

This recipe is healthy, paleo-friendly, and gluten free!

Ingredients

Ground chicken/Ground turkey 1 Pound
Hot sauce 1/2 Cup (8 tbs)
Chopped onion 1/2 Cup (8 tbs)
Coconut flour 1/4 Cup (4 tbs)
Chopped celery 1/4 Cup (4 tbs)
Chopped carrot 1/4 Cup (4 tbs)
Egg 1
Garlic powder 1 Teaspoon
Salt and pepper To Taste

Directions

Getting Ready

Preheat oven to 375F

Making

Combine all the ingredients in a bowl. Blend well. Divide into muffin tins or put into one loaf pan.

Bake for 25-35 minutes or until cooked all the way through. Let sit for 5-10 minutes and enjoy!

Serving

Serve with blue cheese dressing, crumble on top of a salad or enjoy with a side of rice.
