|Lean ground beef||1 Pound|
|Pork sausage||4 Ounce|
|Oatmeal/Bread crumbs /cracker crumbs /cornflakes||1 Cup (16 tbs)|
|Minced onion||1/2 Cup (8 tbs)|
|Minced parsley||1/2 Cup (8 tbs)|
|Garlic||2 Clove (10 gm) , minced|
|Grated carrots||1/2 Cup (8 tbs) (any veggies like squash, spinach, optional)|
|Chopped onion||1/4 Cup (4 tbs)|
|Minced garlic||1 Teaspoon|
|Minced jalapeno||2 Tablespoon|
|Chicken broth||1/2 Cup (8 tbs)|
|Tomato puree||1 Cup (16 tbs)|
|Honey/Brown sugar||1 Teaspoon|
|Wine/Cider vinegar||1 Tablespoon|
Preheat oven to 350F.
In a large bowl, combine meat, egg, oatmeal, salt, pepper, onion, parsley, garlic, any vegetable and mix well.
Place into loaf pan or shape into loaf and place on a baking sheet.
Pop into oven and bake for 1 hour or until internal temperature reaches 160-165F.
For the sauce, sauté onion, garlic, jalapenos in oil for 5 minutes or until soft.
Add broth, honey, tomato, vinegar and bring to simmer for 30 minutes.
Allow the meatloaf to cool for 10 minutes and slice as desired.
Serve with tomato sauce and enjoy!
