Oatmeal/Bread crumbs /cracker crumbs /cornflakes | 1 Cup (16 tbs) | |
Salt | 1 Teaspoon | |
Pepper | 1 Teaspoon | |
Minced onion | 1/2 Cup (8 tbs) | |
Minced parsley | 1/2 Cup (8 tbs) | |
Garlic | 2 Clove (10 gm) , minced | |
Grated carrots | 1/2 Cup (8 tbs) (any veggies like squash, spinach, optional) | |
Chopped onion | 1/4 Cup (4 tbs) | |
Minced garlic | 1 Teaspoon | |
Minced jalapeno | 2 Tablespoon | |
Oil | 1/2 Teaspoon | |
Chicken broth | 1/2 Cup (8 tbs) | |
Tomato puree | 1 Cup (16 tbs) | |
Honey/Brown sugar | 1 Teaspoon | |
Wine/Cider vinegar | 1 Tablespoon |
GETTING READY:
1.Preheat oven to 350F.
MAKING:
2.In a large bowl, combine meat, egg, oatmeal, salt, pepper, onion, parsley, garlic, any vegetable and mix well.
3.Place into loaf pan or shape into loaf and place on a baking sheet.
4.Pop into oven and bake for 1 hour or until internal temperature reaches 160-165F.
5.For the sauce, sauté onion, garlic, jalapenos in oil for 5 minutes or until soft.
6.Add broth, honey, tomato, vinegar and bring to simmer for 30 minutes.
7.Allow the meatloaf to cool for 10 minutes and slice as desired.
SERVING:
8.Serve with tomato sauce and enjoy!
