Not your Mama's Meatloaf - Kamado Joe

In this video, I take cooking meatloaf to another level. I want to thank my friend for sharing her recipe. I hope you enjoy it as much as I did.

Ingredients

Ground beef 1 Pound
Ground pork 1 Pound
Ground lamb 1/2 Pound
Beaten eggs 2
Milk 3/4 Cup (12 tbs)
Dry plain bread crumbs/2 cups soft bread crumbs 1 Cup (16 tbs)
Finely chopped onion 1/4 Cup (4 tbs)
Dry parsley/2 tablespoons snipped fresh parsley 1 Tablespoon
Salt 1 Teaspoon
Ground pepper 1/8 Teaspoon
Crushed dried basil 1/4 Teaspoon
Crushed oregano 1/4 Teaspoon
Crushed sage 1/4 Teaspoon
For sauce:
Catsup 1/2 Cup (8 tbs)
Brown sugar 4 Tablespoon
Dry mustard 2 Teaspoon
Onion powder 1/2 Teaspoon
Garlic powder 1/2 Teaspoon

Directions

GETTING READY:

Cube the meat and freeze it. Using a grinder, mince the meat as shown in the video.

For the sauce, in a large bowl, combine catsup, brown sugar, yellow mustard, onion powder, onion powder and whisk well.

MAKING:

Preheat the grill to 400F. Arrange racks as shown in the video.

In a large bowl, combine minced meat, oregano, sage, basil, garlic powder, toasted onion, black pepper, parsley, kosher salt, breadcrumbs, beaten eggs, milk and mix well with hands.

Fill the mixture into aluminium foil loaf pans. Place the pans into grill and cook for 45 minutes.

Spread the prepared sauce on the top and grill for another 10 minutes.
