Turkey Stuffed Tomatoes

Ingredients

Turkey 6 Ounce , chopped
Red tomatoes 4 Large
Cucumber 1/2
Celery stalks 2
Cooked sweetcorn 4 Tablespoon
Mayonnaise 1/4 Pint
Chopped parsley 1 Tablespoon
Lemon slices 4

Directions

GETTING READY

1) Chop cold turkey.

2) Remove the tops of the tomatoes, remove seeds, and reserve juice.

3) Peel cucumber, dice, salt and leave for 20 minutes.

4) Wash the cucumber and drain.

5) Chop celery and mix with sweetcorn.

MAKING

6) Add juice from tomatoes to the prepared mayonnaise.

4) Mix vegetables and turkey with enough mayonnaise to make creamy mixture.

5) Fill the mixture into tomatoes, and garnish with sliced lemon or chopped parsley.

SERVING

6) Serve the stuffed tomatoes with brown bread and butter.
