Learn to make gravy for the holidays with this turkey gravy recipe! It's super yummy and it will complete your Thanksgiving or Christmas feast. Start with homemade stock, make a roux and add your giblets and a splash of sherry for the best turkey gravy.
Turkey stock/Chicken stock | 1 Quart | |
Bay leaf | 1 | |
Thyme | 1/2 Teaspoon | |
Sherry/White wine /apple cider | 1/2 Cup (8 tbs) | |
Turkey giblets/Chicken giblets | 1 , halved (heart and gizzards) | |
Pan drippings | 1/2 Cup (8 tbs) (add butter to make up the difference) | |
Shallot | 1 , diced | |
Flour | 1/2 Cup (8 tbs) |
MAKING:
In a saucepan, combine stock, bay leaf, thyme, sherry and giblets. Bring the ingredients to boil.
Reduce the heat, cover with lid and simmer for 30 minutes until giblets are cooked. Turn off heat and set aside.
In a roasting pan, heat drippings and add butter. Saute shallots in it for about 90 seconds.
Add flour and cook the roux for 1 minute.
Gradually add stock and roux. Whisk until smooth and bring the ingredients to simmer. Add giblets and allow the gravy to simmer for 5 minutes.
