Simple Tofu Mayo Recipe

Ingredients

Silken tofu 3 Ounce (1/2 Package used)
Cashew cheese/Raw cashews 1/4 Cup (4 tbs)
Lemon juice 2 Tablespoon
Apple cider vinegar 2 Tablespoon
Rice vinegar 1 Teaspoon
Dijon mustard 1/2 Teaspoon
Evaporated cane juice/Agave nectar 1 Teaspoon
Salt 1/4 Teaspoon

Directions

MAKING

1. Into a blender or food processor, add all the ingredients and blend until you get a smooth creamy mixture (If using silken tofu, do not add water).

SERVING

2. Serve as desired.

NOTE

You may substitute Creamy Cashew Cheese instead of raw cashews, if desired.
