Citrus Marinade for White Meat

The video explains how you can marinade any white meat in citrus. Citrus adds a different flavour to the meat. The instructions are so nicely demonstrated that you can turn off the audio.


Zest of orange 1⁄2
Orange juice 1⁄2
Lime zest 1⁄2
Lime juice 1⁄2
Grated ginger 1 Tablespoon
Garlic 1 Clove (5 gm) , minced
Green onion white part 1 , sliced into 0.25 inch rounds (And Light Green Parts)
Boneless skinless chicken breasts 2


Place lime and orange juice, zest, ginger, garlic, and scallion in a small bowl, and whisk to combine. Place chicken in a shallow dish, cover with marinade, turning to completely coat. Transfer to refrigerator, and marinate 1 hour.

Remove chicken 30 minutes before cooking. Heat grill, or grill pan over medium-high heat. Remove chicken from marinade and season with salt and pepper. Grill until completely cooked all the way through.

Transfer chicken to cutting board and cool slightly. Cut chicken on the bias and serve with your favorite vegetable or atop your favorite salad. I serve this atop my Spicy Mango Asian Salad.
