Tomato Cucumber Marinade

Ingredients

Tomatoes 2 Medium , sliced
Cucumber 1 Medium , peeled and thinly sliced
Onion 1⁄2 Medium , thinly sliced and separated into rings
Salad oil 1⁄2 Cup (8 tbs)
Vinegar 1⁄4 Cup (4 tbs)
Salt 1 Teaspoon
Dried basil 1 Teaspoon , crushed
Dried tarragon 1 Teaspoon , crushed
Pepper 1⁄8 Teaspoon
Lettuce 1

Directions

Advance preparation: Layer tomatoes, cucumber, and onion in shallow glass dish.

Combine oil, vinegar, salt, basil, tarragon, and pepper; beat well with rotary or electric beater.

Pour mixture over vegetables.

Cover; refrigerate for 5 to 24 hours.

Before serving: Drain vegetables, reserving marinade.

Arrange marinated vegetables in lettuce-lined bowl.

Pass reserved marinade.
