Tomato Cucumber Marinade


Tomatoes 2 Medium , sliced
Cucumber 1 Medium , peeled and thinly sliced
Onion 1⁄2 Medium , thinly sliced and separated into rings
Salad oil 1⁄2 Cup (8 tbs)
Vinegar 1⁄4 Cup (4 tbs)
Salt 1 Teaspoon
Dried basil 1 Teaspoon , crushed
Dried tarragon 1 Teaspoon , crushed
Pepper 1⁄8 Teaspoon
Lettuce 1


Advance preparation: Layer tomatoes, cucumber, and onion in shallow glass dish.

Combine oil, vinegar, salt, basil, tarragon, and pepper beat well with rotary or electric beater.

Pour mixture over vegetables.

Cover refrigerate for 5 to 24 hours.

Before serving: Drain vegetables, reserving marinade.

Arrange marinated vegetables in lettuce-lined bowl.

Pass reserved marinade.
