Apple Marinade

Takashi Inoue, Chef of Takashi in the West Village shows the steps to this Japanese and Korean marinade that has a secret weapon for softening tough meat.


Apple 1 , diced
Sake 2 Tablespoon
Sesame seed 3 Tablespoon
Black pepper 1 Tablespoon
Orange marmalade 8 Ounce
Grated garlic 1 Ounce
Crushed pepper 3 Tablespoon
Brown sugar 1 Tablespoon
Sesame oil 1 Cup (16 tbs)



In a blender, blend together apple, sake, sesame seeds, black pepper, marmalade, garlic, crushed pepper, brown sugar and sesame oil.

The marinade is ready to use.
