How to make a BBQ Marinade with Warren Nash


Lemon grass 2 (outer leaves removed)
Ginger 20 Gram , peeled
Garlic 3 Clove (15 gm)
Birds eye chilies 2
Red chilies 2
Spring onions 2
Fresh coriander 1/4 Cup (4 tbs)
Oil 2 Tablespoon
Salt 1 Pinch
For soy dipping sauce
Sweet dark soy sauce 2 Tablespoon
Black pepper 1 Pinch
Chili sambal 1 (or chilli sauce, or a finely sliced birds chilli)
Juice of lemon 1/2



For the marinade – in a food processor, add in all the ingredients and process until smooth.

Pour the marinade over the chicken thighs or meat and leave to marinade for 2 hours to overnight.

For the soy dipping sauce – in a small bowl, add in all the ingredients and mix well.

Cook on the BBQ, or even in a hot oven, or grill.


Serve the chicken thigh or meat with a soy and chili dipping sauce.
