|Butter/Margarine /fat /salad oil||3 Tablespoon|
|Milk/1/2 cup evaporated milk and 1/2 cup water||1 Cup (16 tbs) (Bottled)|
|Processed american cheddar cheese||1/4 Pound , grated to make 1 cup|
|Cooked macaroni||1 Cup (16 tbs) , drained|
|Canned pimiento||1 , chopped|
|Minced parsley||1 Tablespoon|
|Minced onion||1 Teaspoon|
|Dried bread crumbs||1 Cup (16 tbs) , sifted|
|Egg||1 , slightly beaten|
|Cold water||1 Tablespoon|
Melt butter in double boiler.
Stir in flour, salt, and paprika.
Add milk gradually, and cook until thick, stirring.
Remove, and add next 5 ingredients.
Mix well; pour into a pan, 8"x8"x2", and chill until firm.
Cut into 2" squares; then dip each square in crumbs, then in the egg combined with the cold water, then in crumbs.
Fry until golden brown in 1 1/2" of fat or salad oil heated to 375°F., or hot enough to brown a cube of day-old bread in 40 sec.
