Cheese Macaroni Patties

Butter/Margarine /fat /salad oil 3 Tablespoon
Flour 5 Tablespoon
Salt 3/4 Teaspoon
Paprika 1/8 Teaspoon
Milk/1/2 cup evaporated milk and 1/2 cup water 1 Cup (16 tbs) (Bottled)
Processed american cheddar cheese 1/4 Pound , grated to make 1 cup
Cooked macaroni 1 Cup (16 tbs) , drained
Canned pimiento 1 , chopped
Minced parsley 1 Tablespoon
Minced onion 1 Teaspoon
Dried bread crumbs 1 Cup (16 tbs) , sifted
Egg 1 , slightly beaten
Cold water 1 Tablespoon


Melt butter in double boiler.

Stir in flour, salt, and paprika.

Add milk gradually, and cook until thick, stirring.

Remove, and add next 5 ingredients.

Mix well; pour into a pan, 8"x8"x2", and chill until firm.

Cut into 2" squares; then dip each square in crumbs, then in the egg combined with the cold water, then in crumbs.

Fry until golden brown in 1 1/2" of fat or salad oil heated to 375°F., or hot enough to brown a cube of day-old bread in 40 sec.
