Macaroni Cheese

Macaroni 3 Ounce
Bechamel sauce 3/4 Pint
Grated cheese 4 Ounce
Salt To Taste
Pepper To Taste
Grated nutmeg To Taste


Break the macaroni into short lengths and cook in plenty of salted water for about 20 minutes.

Strain and put into a buttered fireproof dish or individual dishes.

Sprinkle three quarters of the grated cheese among the macaroni, season carefully.

Pour over the Bechamel sauce, and cover the top with the rest of the grated cheese.

Cook in a fairly brisk oven, until lightly browned, for about 25 minutes.
