Poblano pepper/4 jalapenos | 1 , seeded and diced | |
Garlic | 1 Teaspoon | |

Milk | 1 Cup (16 tbs) | |
Sour cream | 1/4 Cup (4 tbs) | |
Grated cheese | 1 Cup (16 tbs) | |

Milk | 1 Cup (16 tbs) | |

Macaroni | 1 Pound |
GETTING READY:
Cook pasta for 80% of suggested time according to package directions for cooking al dente. Reserve cooking liquid.
MAKING:
Melt butter in a saucepan and sauté onions and pepper until softened or for 5 minutes.
Add garlic and cook for 30 seconds.
Add flour and cook for 60 seconds.
Add milk in small batches and whisk well. Bring to simmer.
Add ½ cup of pasta cooking water, salt, pepper, sour cream and mix well.
Add cheese and stir well until melted.
Drain pasta and combine with sauce and another ½ cup of pasta cooking water.
Cover with a lid and simmer for 5 minutes until well cooked.
SERVING:
