Lemon Loaf

When thinking of cakes, cookies and more, one of the main ingredients is butter. Try switching out half of the butter with a quarter amount of Greek Yogurt, this will cut out half of the saturated fat that is not wanted. This lemon loaf is soft, moist and bursting with flavor.


Butter 1/4 Cup (4 tbs) (softened)
Greek yogurt 1/8 Cup (2 tbs) (2%)
Granulated sugar 1 1/4 Cup (20 tbs)
Eggs 2 (room temperature)
Zest of lemon 1
All purpose flour
Baking powder 1/4 Teaspoon
Baking soda 1/4 Teaspoon
Salt 1/2 Teaspoon
Lemon juice 1/3 Cup (5.33 tbs) (+2 Tbsp)
Buttermilk 1/3 Cup (5.33 tbs) (+2 Tbsp)
Vanilla extract 1 Teaspoon
Confectioner sugar 1 1/2 Cup (24 tbs)
Lemon juice 2 1/2 Tablespoon



1. Preheat oven to 350 degree F.


2. In a large mixing bowl, using a mixer cream together butter, yogurt and sugar.

3. Add eggs, one at a time, and mix well after each addition.

4. Stir in lemon zest and give it another good mix.

5. In another bowl sift together the flour, baking powder, baking soda and salt. Set aside.

6. In a third bowl, combine lemon juice, buttermilk and vanilla extract. Stir to combine.

7. Turn the mixer on and alternate by adding in the dry ingredients then the wet ingredients into the large bowl with butter sugar mixture. Repeat the process until all the ingredients have been used and mixed well.

8. Into a greased loaf pan, pour the batter and pop it in the oven. Bake for 45 minutes or until a wooden skewer inserted in the middle comes out clean. If it does not then return to the oven for 4-5 minute increments until cooked thoroughly.

9. Take the loaf out of the oven and cool in the pan for 30 minutes, then transfer to a cooling rack. Allow to cool completely before frosting.


10. When ready to frost combine the confectioner sugar and lemon juice in a large bowl. Mix well.

11. Gently spread frosting over the top of the loaf and allow it to set for about 1 hour.


12. Cut into 1-inch pieces, serve and enjoy!
