Lentil Soup with Rice and Apricots

Olive oil 2 Tablespoon
Onion 1 Large , chopped
Garlic 6 Clove (30 gm) , chopped
Raw brown rice 1/2 Cup (8 tbs)
Green pepper 1 , chopped
Cinnamon 1/4 Teaspoon
Cayenne pepper 1/4 Teaspoon
Paprika 1 Tablespoon
Dried parsley 2 Tablespoon
Chopped fresh mint 1 Tablespoon
Dried lentils 2 Cup (32 tbs)
Water/Vegetable stock 10 Cup (160 tbs)
Chopped dried apricots 1 Cup (16 tbs)
Salt 1 Teaspoon
Black pepper 1 Teaspoon



1.Take a soup kettle, and heat oil in it.

2.Add the garlic and saute.

3.Toss in the onion,and saute till transparent

3.Add the rice and the pepper.Saute for a few minutes.

4.Add remaining ingredients except salt and pepper. Cook on low heat, for upto an hour or until lentils are soft and rice is cooked

5.Remove from heat, and add seasonings


6.Serve hot in large bowls.
