Lasagna is one of our favorite American Italian dishes. In this video I show how you can cook this amazing dish outdoors. I am using myBig Joe from Kamado Joe and some of the best cheeses I have ever had.
The fine folks from SartoriCheese sent me some cheeses for me to try. This definitely took my lasagna recipe to another level!!
|Lasagna noodles||9 Ounce (1 box)|
|Pasta sauce||32 Ounce , divided|
|Ricotta cheese||32 Ounce , grated|
|Sarvecchio cheese||1/2 Cup (8 tbs) , grated (from SartoriCheese)|
|Basil and olive oil asiago cheese||1/2 Cup (8 tbs) , grated (from SartoriCheese)|
|Bellavitano parmesan cheese||1/2 Cup (8 tbs) , grated (from SartoriCheese)|
|Mozzarella cheese||1/2 Cup (8 tbs) , grated|
|Short ribs of beef||1/2 Pound|
|Italian sausage||1/2 Pound|
|Kosher salt||To Taste|
|Ground black pepper||To Taste|
|Fresh basil||1 Tablespoon|
Preheat kamado joe to 350F.
Cook pasta according to package directions.
In a bowl, combine ricotta cheese, eggs and mix well.
Add asiago cheese, parmesan cheese, sarvecchio cheese and mix well.
In a meat grinder, grind beef and sausage.
Heat a saucepan and add ground meat to it. Add kosher salt, black pepper and cook for 2-3 minutes or until well browned.
Add pasta sauce, basil and allow to simmer for 30-60 minutes.
Layer a bed of pasta sauce and noodles in an aluminium foil tray.
Top with meat sauce and cheese mixture. Sprinkle grated mozzarella cheese over it and repeat layering until the baking dish is full.
Top with remaining cheeses and cover with an aluminium foil.
Place on grill and bake for 45 minutes. Uncover and cook for another 30 minutes.
Allow to rest for a while once done.
Serve and enjoy!
