Abbaccbio Alla Cacciatora

Ingredients

Olive oil 3 Tablespoon
Boneless lamb shoulder 2 Pound (1 1/2 inch chunks)
Finely chopped garlic 1 Teaspoon (scant)
Crumbled dried rosemary 1 Teaspoon (scant)
Salt 1 Teaspoon (scant)
Black pepper 1/2 Teaspoon
Flour 2 1/2 Teaspoon
Red wine vinegar 4 Tablespoon
Chicken stock 3/8 Pint
Flat anchovy fillets 2 , drained, washed and dried

Directions

GETTING READY

1. Preheat oven to 500°F.

MAKING

2. In a large heavy frying pan add oil and heat.

3. Add lamb chunks 4-5 at a times. Brown them over moderate heat.

4. Transfer the lamb chunks to an oven proof, medium size pan.

5. Discard the fat except for a thin film which should be left in the pan.

6. Add salt, pepper, garlic and rosemary to the lamb as seasoning.

7. Sprinkle flour. Toss the meat using wooden spoon to coat the chunks well.

8. In the top section of the oven, place the braising pan. Brown lambs for 10 minutes, while turning it at least 2-3 times.

9. Check if lamb is lightly crusted. Remove it from the braising pan and reduce the heat to 350°F.

10. In the frying pan add vinegar. Boil briskly for 2 minutes. Scrape the brown bits which cling to the bottom of the pan.

11. Add chicken stock in the pan of vinegar. Boil.

12. In the braising pan pour the liquid on the lamb.

13. Cover the pan. Place it in the center part of the oven and braise for 45 minutes. Check if tender using the sharp knife.

14. Add stock if needed or if the braising stock cooks away quickly.

FINALIZING

15. In a small bowl ladle at least 2 tablespoon of sauce. Mix anchovies.

16. Add the anchovy mixture in the pan. Cook 2- 3 minutes.

SERVING

17. Serve Abbaccbio Alla Cacciatora in a deep heated dish.
