Lamb leg | 1 1/2 Kilogram | |

GETTING READY
1. Coat lamb leg completely in the rub and then wrap it in a saran wrap. Rest it in the fridge for minimum 6 hours.
2. Preheat the grill to 140 C. Also place a dripping pan with water under the grids.
MAKING
3. To prepare the marinade, mix together rub, olive oil, lemon juice, soy sauce, worcestershire sauce, yellow mustard, lemon juice, black hawaiian salt and black pepper. Set it aside.
4. Place some oak chips in the grill for smoking. Grill the lamb until it reaches an internal temperature of 62 C, basting it with the marinade at regular intervals.
5. Pull the lamb out when done ( approximately 2 hours), and then let it rest for about 10 minutes.
SERVICE
6. Slice and serve the delicious and juicy leg of lamb.
