Potato Latkes

Ingredients

Potatoes 12 Large , peeled and grated
Egg yolks 3 , beaten
Flour 1 1/2 Tablespoon
Onion 1 Large , grated
Salt To Taste
Pepper To Taste
Egg whites 3 , stiffly beaten
Butter/Shortening 5 Tablespoon
Applesauce/Sour cream 4 Tablespoon

Directions

Mix grated, well-drained potatoes with beaten egg yolks, flour, onion, salt and pepper to taste.

Fold in stiffly beaten egg whites.

Heat butter or shortening in frying pan until sizzling.

Drop in potato mixture from spoon.

Drain on absorbent paper.

Serve hot with either applesauce or sour cream, sugared or not as preferred.
