Fried Brussels Sprouts

Ingredients

Brussels sprouts 1 Pound
Shallots 2 Large
Rice vinegar 1/4 Cup (4 tbs)
Water 1/4 Cup (4 tbs)
Sugar 2 Cup (32 tbs)
Salt 1/4 Cup (4 tbs)
Garlic 1 Clove (5 gm) , minced
Fish sauce 2 Tablespoon
Frying oil 2 Cup (32 tbs) (For deep frying
Minced cilantro/Mint 2 Tablespoon

Directions

GETTING READY

Trim the Brussels sprouts and cut in half lengthwise. Peel the shallots and slice thinly.

MAKING

In a small pot, combine vinegar, water, sugar and salt and cook over medium heat until reduced slightly, about 3 minutes simmering.

Add garlic and simmer 1 more minute. Add fish sauce and remove from heat.

Heat oil to 350F and fry the sprouts in batches, about 3 minutes each, transferring to a large bowl as they are done. Fry the sliced shallots, too.

Take out in a large bowl and pour the vinegar sauce over and toss to coat.

SERVING

Garnish with cilantro and serve.
