For any reason, if you are not a fan of Nori sheets like me used in Sushi, this is the recipe for you. Tortilla or other similar thin wrap can be used to replace Nori (Seeweed) sheets. You can spread some sauce on wrap and use it or just plain would be fine. I serve Sushi with spicy sauce.

Sushi rice 1/2 Cup (8 tbs) , washed and soaked
Water 1/3 Cup (5.33 tbs)
Salt To Taste
Rice vinegar 1 Teaspoon
Tortilla 1 , cut into rectangle
Mixed bell peppers 1/2 Cup (8 tbs) , cut into strips (as needed)
Beet 1/2 , sliced (as needed)

1. In a saucepan, take rice, add water and salt, cook covered for 15 to 20 minutes.

2. Add vinegar and mix.

3. On a mat, place a plastic sheet, put tortilla over it, spread a layer of the cooked rice.

4. Flip over, place bell peppers in the center and firmly roll with the help of mat.

5. Arrange a layer of beet on top.

6. Cut into slices and serve.
