|Nectarine||18 , washed, sliced, pits removed, cut into chunks|
|Pectin crystals||3 1/2 Ounce (2 packages)|
|Lemon juice||4 Tablespoon|
|Sugar||9 Cup (144 tbs)|
|Water||3/4 Cup (12 tbs)|
In a large bowl, add nectarines and mash well using a masher.
Add lemon juice, sugar and mix well.
In a small saucepan, combine pectin, water and allow it to boil with continuous whisking.
Add the pecan mixture to the nectarine mash and allow to sit for 10 minutes.
Sterlize jars, lids and rims in boiling water and dry well.
Ladle jams into sterilized jars, leaving 1/2 inch headspace.
Wipe mouths of jars with a clean paper towel to remove jam.
Allow to sit in normal temperature for 24 hours.
Pop into freezer overnight before serving.
