Web chef, Kimberly Turner, shares with you How to Make Peach Freezer Jam!
|Freestone peaches||1 Dozen , halved, stone removed, peeled, chopped, mashed (little chunky)|
|Lemon juice||4 Tablespoon|
|Sugar||9 Cup (144 tbs)|
|Pectin||3 1/2 Ounce (2 box)|
|Cold water||1 1/2 Cup (24 tbs)|
Reserve mashed chunks of one peach in a bowl.
In a large bowl, mash the remaining peaches with masher. Add lemon juice, sugar and let it macerate for 10 minutes.
In a small saucepan, combine pectin, water and allow it to boil with continuous whisking.
Stir pectin mixture into peach mixture and stir well.
Sterlize jars, lids and rims in boiling water and dry well.
Ladle jams into sterilized jars, leaving 1 inch headspace.
Wipe mouths of jars with a clean paper towel to remove jam. Add few chunks of reserved peaches and cover with rims and lids.
Pop into freezer overnight before serving.
