If you like jalapeno poppers, you're bound to love this healthy and satisfying version!
Olive oil | 1 Tablespoon | |
Turkey breast | 1/2 Pound , ground | |
Green pepper | 3/4 Cup (12 tbs) , finely chopped | |
Onion | 1/2 Cup (8 tbs) , finely chopped | |
Garlic clove | 1 , minced | |
Fat free cream cheese | 1/2 Cup (8 tbs) , softened | |
Greek seasoning | To Taste (or seasoning of your choice) | |
Jalapeno peppers | 10 , halved and seeded | |
For topping | ||
Low fat parmesan cheese | 2 Tablespoon , grated |
GETTING READY
1. Preheat the oven to 425 F.
2. Wash, slit the jalapenos in lengthwise, and remove the seeds.
MAKING
3. In a skillet, heat oil over medium heat, sauté turkey with green pepper, onion and garlic, until brown and drain.
4. In a bowl, transfer the turkey mixture and add in cream cheese and seasoning, mix well.
5. Place one tablespoon of turkey mixture over each jalapeño half and press to flatten. Sprinkle Parmesan cheese on top.
6. On a lightly greased baking sheet place the filled jalapeños.
7. Bake jalapenos in the oven for 15 to 20 minutes, or until tops are golden.
SERVING
8. Serve with some ranch dressing if desired.
