Crostini, a classic combination of bread, olive oil and garlic which has been enjoyed for hundreds of years, is also called "bruschetta" around Rome. Although unique to Italy, similar toasts are eaten in Greece, France and in particular Spain. Good bruschetta relies on the quality of the olive oil and the amount of garlic used. The former can never be too good while the latter should not be restrained. Cubes of firm ripe red tomatoes marinated in olive oil, combined with fresh aromatic basil leaves topped on crispy bruschetta, are starters that can liven up any dinner party!

Ingredients

Olive oil 1/2 Teaspoon (For greasing)
French bread loaf 1 , cut into 10 thick slices
For olive oil garlic mixture
Olive oil 1 Tablespoon
Grated garlic 1 Teaspoon
For topping
Chopped tomato 1 Cup (16 tbs) , deseeded and chopped
Olive oil 2 1/2 Tablespoon
Chopped garlic 1 Teaspoon
Dried oregano 1 Teaspoon
Chopped basil 2 Tablespoon
Salt and ground black pepper To Taste

Directions

GETTING READY

1. Grease a baking tray with olive oil.

2. Preheat oven to 180 degree C or 360 degree F.

For Olive Oil Garlic Mixture:

3. In a bowl, mix olive oil and grated garlic. Set aside.

MAKING

For Topping:

4. In a bowl, combine chopped tomato, olive oil, garlic, oregano, basil, salt, and pepper. Mix well, divide the mixture into 10 equal portions and set aside.

5. Place bread slices on greased tray and brush with some olive oil garlic mixture.

6. Pop the tray in oven and bake for 4-5 minutes or until crisp.

FINALIZING

7. Spoon 1 portion of topping on each toasted bread slice.

SERVING

8. Serve immediately and enjoy!
