Corn and Pesto Mini Pizza by Tarla Dalal

Small is beautiful! that's so true of these splendid mini pizzas, which are brimming with taste and health in every bite. The pesto used in this recipe contains basil, which is rich in vitamin a, and walnuts, a wonder food rich in omega-3 fatty acids. Walnuts are also considered a brain booster! what's more, healthy fibre-rich whole wheat pizza bases and an energy-rich corn topping make the handy and tasty corn and pesto mini pizza a nutritious treat! however, remember there is a lot of cheese in it too, so it should be enjoyed only in limited quantities.


Mini whole wheat pizza base 10
Oil 1 Teaspoon (For greasing)
Grated mozzarella cheese 1/4 Cup (4 tbs)
For corn pesto sauce
Boiled sweet corn kernals 1/2 Cup (8 tbs)
Corn flour 2 Teaspoon , dissolved in ¼ cup water
Finely chopped garlic 1/2 Teaspoon
Salt To Taste
For pesto:
Finely chopped basil 2 Tablespoon
Roughly chopped walnuts 1 1/2 Tablespoon
Finely chopped garlic 1/2 Tablespoon
Olive oil 1 Teaspoon
For garnish
Dry red chili flakes 1 Teaspoon (Optional)



For Pesto:

1. In mixer grind basil leaves, walnut, garlic, olive oil, and salt using little water.

2. Grease a baking tray and set aside.

3. Preheat oven to 400 degree F or 200 degree C.


For Corn Pesto Sauce

4. In a non-stick pan, add the prepared pesto along with corn flour water mixture. Stir constantly and cook over medium flame for 1 minute.

5. Add garlic, sweet corn kernels, and salt. Stir and cook for another 1-2 minutes. Divide the mixture into 10 equal portions and keep aside.

6. Place the whole wheat pizza bases on a greased baking tray. Spread one portion of the corn pesto sauce on each base.

7. Sprinkle little cheese evenly over corn pesto sauce of each base.

8. Bake in oven for 10 minutes or until the cheese has melted.


9. Serve hot garnished with red chili flakes.
