Baked Fettuccine with Spinach in Paneer Sauce by Tarla Dalal

Mouth-watering and delicious Italian preparation of cooked fettuccine with a healthy dose of spinach and a luscious cottage cheese sauce. A generous sprinkling of grated cheese before baking, ensures a perfect finish to the baked fettuccine with spinach in paneer sauce. Garnish with chili flakes and serve with freshly toasted garlic bread, for a memorable continental meal.


Cooked fettuccine 1 1/2 Cup (24 tbs)
Blanched and chopped spinach 3/4 Cup (12 tbs)
Oil 1 Tablespoon
Finely chopped onion 1/4 Cup (4 tbs)
Finely chopped garlic 1 Teaspoon
Finely chopped green chili 1 Teaspoon
Salt and ground black pepper To Taste
Milk 1/4 Cup (4 tbs)
Grated processed cheese 5 Tablespoon
For smooth paneer sauce
Grated paneer 1 Cup (16 tbs) (cottage cheese)
Milk 1 Cup (16 tbs)
Salt To Taste
Nutmeg powder 1/2 Teaspoon
For granish
Dry red chili flakes 1/2 Teaspoon



For Paneer Sauce:

1. In blender combine grated paneer, milk, salt, and nutmeg. Blend until smooth and set aside.


2. In a non-stick pan, heat oil, add onion, garlic and green chili. Stir well and cook over medium flame for about 1 minute.

3. Add blanched spinach and season with salt. Stir occasionally and cook for 30 seconds.

4. Add the fettuccine, paneer sauce and pepper. Mix lightly and cook for another 2-3 minutes, tossing occasionally.

5. Stir in milk and 2 tablespoon of cheese.

6. Into a baking dish, transfer the mixture and sprinkle the remaining cheese evenly over top.

7. Pop in microwave and cook on HIGH for 4-5 minutes or bake in a preheated oven at 180 degree C (360 degree F) for 15 minutes.


8. Serve hot garnished with chili flakes
