Penne with fresh spinach tastes divine and easy to make. If Italian is what you like, then this recipe is for you. A must try on a lazy Sunday! Even your kids are going to love.
For the sauce | ||
Olive oil | 2 Tablespoon | |
Onion | 4 Tablespoon , finely chopped | |
Garlic | 1 Teaspoon , minced | |
Fresh tomato puree | 1/2 Cup (8 tbs) | |
Spinach | 1 Cup (16 tbs) , finely chopped | |
Italian seasoning | 1 Teaspoon | |
Salt and pepper | To Taste | |
For the pasta | ||
Penne pasta | 2 Cup (32 tbs) | |
Salt | 1 Tablespoon (Boiled in salt water) |
MAKING
1. In a large pot, boil 6 cups of water and add in the salt. Followed by penne and cook according to the package direction.
2. For the sauce – in a pan, add in the olive oil, onion and garlic. Sauté for a few seconds.
3. Add in the tomato puree and simmer for 5 minutes on high heat, while stirring in between.
4. Put in all the spinach and sauté for 2 – 3 minutes. Season with Italian seasoning, salt and pepper and mix well.
5. Drain the penne but reserve ¼ cup of water. Place the pasta back to the pot along with the reserved water. Stir in the sauce and heat through for a few seconds.
SERVING
6. Serve the pasta along with some juice if you wish.
