How to Make Stuffed Sweet Peppers

These stuffed peppers are stuffed with sweet Italian sausage and onions, zucchini, fire roasted tomatoes, orzo and nutty parmesan-reggiano. By switching up the protein and vegetables you can make this dish your own.

Ingredients

Olive oil 2 Tablespoon
Italian sausage 1 Pound , casing removed
Sweet onion 4 Ounce , chopped
Garlic clove 1 , minced
Zucchini 1 , shredded
Fire roasted tomatoes 1/2 Cup (8 tbs)
Parmesan reggiano cheese 3 Ounce , grated, divided
Salt and pepper To Taste
Sweet pepper 4 , cut in half and seeded
To cook orzo
Orzo 1 Cup (16 tbs)
Reduced sodium chicken broth 1 Cup (16 tbs)
Water 1 Cup (16 tbs)

Directions

GETTING READY

1. Preheat oven to 350 degrees F.

MAKING

2. In a large saute pan over medium-high flame, add in olive oil and sausage. Brown meat for about 8-10 minutes or until cooked through.

3. Meanwhile in a pot, bring chicken stock and water to a boil. Add in the orzo and cook half the time of package directions. Drain the liquid into a 9x13 baking dish and place the orzo in a large bowl.

4. After the sausage has browned add in the onions and cook until translucent.

5. Stir in the garlic and cook for an additional 2 minutes.

6. Into a bowl, transfer the sausage mixture along with cooked orzo, zucchini, tomatoes and parmesan cheese. Stir to combine.

7. Add in salt and pepper to desired taste.

8. Spoon the sausage mixture into each half of the peppers and place in the baking dish that has the reserved orzo liquid. (If the peppers don't lay flat in the baking dish, slice off a small portion of the bottom.)

9. Cover the baking dish with aluminum foil and place into the oven for 35 minutes. Five minutes before finished remove the foil and sprinkle more cheese over top each pepper.

SERVING

10. Serve and enjoy!
