Homemade Orecchiette with Pancetta and Peas

Pancetta 1/4 Pound , cubed
Olive oil 2 Tablespoon
Leeks with green tops 1 Medium , chop
Minced garlic 2 Clove (10 gm)
Peas 3/4 Cup (12 tbs)
Pepper 1 Pinch
White wine 1/4 Cup (4 tbs)
Red pepper flakes 1/4 Teaspoon
Lemon zest 1 Teaspoon
Ricotta cheese 1 Cup (16 tbs)
For dough
All purpose flour 2 Cup (32 tbs)
Semolina flour 2 Cup (32 tbs)
Salt 1 Pinch
Water 1 1/4 Cup (20 tbs) (as needed)
For the garnish
Grated parmigiano reggiano cheese 1 Tablespoon
Basil leaves 6 Medium



1. In a bowl or worktop place the all-purpose flour, semolina flour and salt. Mix to combine and make a well in the center.

2. Gradually pour the water and start kneading for 8 minutes or until smooth dough is formed.

3. Once done leave and allow it to rest for 10-15 minutes. After the dough has rested take a small amount of dough and roll it into a long rope.

4. Cut the dough into bite size pieces and then dip you finger into semolina flour and press each dough pieces. Continue until all dough is done.

5. Boil salted water in a large pot for the pasta, once it comes to a boil add the pasta and cook for 3-4 minutes or until al dente.

6. In a pan pour olive oil and add the pancetta. Cook over medium heat.

7. Add the leeks and stir everything, add garlic, peas, pepper and salt. Stir and pour white wine, red pepper flakes and grated lemon zest.

8. Finally add the ricotta cheese and stir everything. Add pasta and stir everything until well combined.

9. Transfer in a serving plate and sprinkle grated parmigiano reggiano and basil.


10. Serve with a glass of chilled white wine.
