Skinny Girl Pasta - Light, Fresh and Yummy

Can't go wrong with pasta, olive oil, and fresh veggies for a light meal. This is a go-to recipe when I've been eating like a beast all week. It makes me feel like I'm eating a bowl of..... "healthy fresh". It's super easy to make and I've stop measuring a long time ago. I just throw whatever veggies I have in the olive oil and call it done.

It's a quick, easy meal or side dish.


For cooking the spaghetti
Spaghetti 7 Ounce (Thin spaghetti noodles used)
Water 3 Cup (48 tbs) (Or as needed)
Salt To Taste (Boiled in salt water)
For seasoning the noodles/pasta
Cajun seasoning To Taste
Parsley To Taste
Salt To Taste
For sauteing the vegetables
Extra virgin olive oil 1/2 Cup (8 tbs) (1/4
Garlic cloves 5 Medium , minced (4
Green onions 2 Medium , finely diced
Green bell pepper 1/2 Medium , finely diced
Fresh broccoli 1 1/2 Cup (24 tbs) , finely diced
Cauliflower florets 1 Cup (16 tbs) , finely diced
Ripe plum tomatoes 4 Medium , finely diced (Vine ripe plum tomatoes used)
Black olives 1/2 Cup (8 tbs) , finely diced
For the garnish
Parmesan cheese To Taste
