90 Second Bacon Confetti Frittata

Perfect combination of bacon, egg, and vegetables makes the dish absolutely delicious.


Butter 1 Tablespoon
Bacon slices 5 , diced
Diced onion 1/2 Cup (8 tbs)
Baby potatoes 4 , diced
Sweet pepper 6 Small , diced
Asparagus 1/4 Pound , trimmed and chopped
Salt and pepper To Taste
Eggs 10 Large
Whole milk 1/2 Cup (8 tbs)
Shredded colby jack cheese 1 Cup (16 tbs)
For garnish
Avocado 1/4 Small , sliced (as needed)



1. Preheat oven to 350 degree F.


2. In a large oven proof skillet, melt butter and saute bacon, onion, potatoes, red peppers and asparagus. Season with salt and pepper. Cook until the vegetables become soft and the bacon begins to crisp.

3. In a medium bowl, whisk together eggs and milk. Season with salt and pepper.

4. Add egg mixture to skillet, sprinkle with cheese.

5. Bake for 12-15 minutes or until slightly firm to the touch.


6. Garnish with avocado slices if desired and serve hot.
