Vibrant Veg Pasta in Tomato Sauce

Veg pasta is an absolute kids favorite, they often make faces in eating veggies, but this time they won't be able to ignore it. After all veggies are served along with their lovable pasta.


For sauce
Olive oil 2 Tablespoon
Onion 2 Tablespoon , finely chopped
Garlic 1 Teaspoon , minced
Tomatoes 3 , pureed
Red bell pepper 1/4 , sliced
Yellow bell pepper 1/4 , sliced
Mushrooms 1/4 Cup (4 tbs) , sliced
Baby corn 1/4 Cup (4 tbs) , sliced
Italian seasoning 1 Teaspoon
Salt and pepper To Taste
For pasta
Fusilli pasta 2 Cup (32 tbs) (or any other pasta of your choice)
Salt 1 Tablespoon (Boiled in salt water)
For garnish
Parsley 1/4 Cup (4 tbs) , finely chopped



1. In a large pot, boil 6 cups of water and add in the salt. Followed by fusilli and cook according to the package direction.

2. For the sauce – in a pan, add in the olive oil, onion and garlic. Sauté for a few seconds.

3. Add in the tomato puree and simmer for 5 minutes on high heat, while stirring in between.

4. Stir in all the veggies and sauté for 2 – 3 minutes. Season with Italian seasoning,salt and pepper and mix well.

5. Drain the fusilli but reserve ¼ cup of water. Place the pasta back to the pot along with the reserved water. Sir in the sauce and heat through for a few seconds.


6. Garnish the pasta with parsley and serve.
