Packed With Protein Chicken Pesto Panini

In Italy the term 'panino' refers to a small bread roll and its plural is 'panini'. Perhaps the word is derived from 'pane' which means bread. In general though, Panino is often used to refer to a grilled sandwich or a pressed and toasted sandwich.

Ingredients

Whole wheat bread slices 8
Low sodium light cream cheese spread/Low fat butter 2 Tablespoon (Or as per taste)
Spinach leaves 1/2 Cup (8 tbs)
Lean smoked deli chicken breast 1/2 Pound , cooked and sliced
Reduced sodium basil pesto 1/4 Cup (4 tbs)
Roasted garlic 1 Teaspoon , minced
Rosemary 1 Teaspoon (Leveled)
Low fat cheese slice 4 (preferably low sodium)
Reduced sodium salsa 1 Tablespoon
Red chili flakes 1/2 Teaspoon

Directions

GETTING READY

1. Preheat the grill.

MAKING

2. Spread 1 side of each bread slice with butter. Place 4 bread slices, butter sides down, on the sandwich grill or on grill pan. Top with spinach leaf, chicken slices, pesto, roasted garlic, rosemary and cheese. Place the other remaining bread slices on top, butter sides up.

3. Cook over medium heat 4 to 5 minutes, turning once, until bread is crisp and cheese is melted.

SERVING

4. Serve with freshly made tasty tomato salsa sprinkled with red chili flakes.
