Peach, Gorgonzola & Thyme Pizza

The perfect summertime pizza recipe! Fresh ripe peaches, crumbled gorgonzola cheese and fresh thyme on a crisp cracker crust (recipe video below) make up this pizza. I cooked mine on my Big Green Egg, but it could easily be done in your kitchen oven.

Ingredients

Pizza crust 1 (crisp cracker crust)
Extra virgin olive oil 1 Tablespoon (as needed)
Crumbled gorgonzola cheese 1/4 Cup (4 tbs) (as needed)
Thinly sliced peaches 1/4 Cup (4 tbs) (as needed)
Chopped fresh thyme leaves 1 Tablespoon

Directions

GETTING READY

1. Preheat oven to high (about 550 degree F).

MAKING

2. Drizzle olive oil on crust and sprinkle cheese on top.

3. Lay peach slices and sprinkle thyme on top of cheese.

4. Place pizza on oven, cover and cook for 5-10 minutes or until cheese is melted and crust is nice and golden.

SERVING

5. Cut into wedges, serve and enjoy!
