Diced tomatoes, fresh basil and chicken make this a delicious Italian dish to serve up in a jiffy!
Olive oil | 1/4 Cup (4 tbs) | |
Garlic | 1 Teaspoon , chopped | |
Canned diced tomatoes | 28 Ounce , drained | |
Fresh basil | 1/2 Cup (8 tbs) , chopped | |
Boneless skinless chicken breast | 2 Pound , cooked and cubed | |
Penne pasta | 16 Ounce , cooked | |
Mozarrella cheese | 8 Ounce , shredded | |
Salt and pepper | To Taste |
MAKING
1. In a skillet, heat oil over medium heat, add garlic and sauté for one minute. Add in tomatoes and basil, cook for another 2 minutes.
2. Add chicken, sauté for about 5 minutes, until heated through. Transfer to a large serving bowl, add pasta and cheese, toss gently to mix. Season with salt and pepper, mix again.
SERVING
3. Serve with your choice of beverage.
