Sunset Eggplant Arrabiato

Grilled baby Eggplant topped with arrabiato sauce made from the stewed tomatoes. These gourmet baby eggplants from Sunset Produce are so sweet and fabulous that they make everything you cook with them irresistible.

Grilling the baby eggplant brings out the flavor of this dish, blending well with the heat of the sauce, making it a perfect compliment to your summer pasta dish. Ingredients

Baby eggplant 2 , thinly sliced
Onion 1 Cup (16 tbs) , chopped finely
Olive oil 1 Tablespoon
Garlic 5 Clove (25 gm)
Red italian dry wine 1/2 Cup (8 tbs)
Basil leaves 2 Tablespoon , chopped finely
Tomato paste 1/2 Cup (8 tbs)
Lemon 1/2 , juiced
Crushed dried red chili seeds 2 Teaspoon
Freshly stewed tomatoes 5 Cup (80 tbs)

Directions

MAKING

1. Pan fry the onion until soft and golden.

2. Just before removing the onion, add the chopped garlic and cook for another minute.

3. Transfer the garlic and onion mix to a large sauce pan along with all the other ingredients and bring to a boil. Allow to boil for 1 minute before reducing the heat to a simmer, cooking for 20-30 minutes to allow all the flavors to blend together. More if you have the time.

4. Grill the thinly sliced eggplant pieces.

SERVING

5. Top cooked spaghetti with the grilled eggplant and the sauce. Toss and serve.
