These tasty meatballs without breadcrumbs are Atkins Induction Friendly and perfect for a low carb diet.
Ground beef | 1 Pound | |
Italian sausage link | 2 , casing removed | |
Garlic | 2 Clove (10 gm) , crushed | |
Onion | 1 Small , minced | |
Eggs | 1 Large , beaten | |
Parmesan cheese | 1 Cup (16 tbs) , grated | |
Ketchup | 2 Tablespoon ((sugar free)) | |
Flat leaf parsley | 2 Tablespoon , chopped | |
Dried oregano | 1 Teaspoon | |
Salt | To Taste | |
Black pepper | To Taste | |
Oil | 2 Tablespoon , divided ((1 tbsp. for onion mixture and rest for the meatballs)) | |
Tomato sauce | 1 Cup (16 tbs) |
MAKING
1. In a large bowl add in the Italian sausage and beef. Mix well and set aside.
2. In a sauce pan add in the oil, garlic, ginger and onion. Sauté for 4 minutes, remove the mixture and place in a small bowl, allow to cook for 5 minutes.
3. Into the beef mixture bowl add in the onion mixture, egg, parsley, ketchup, oregano, parmesan cheese, salt and pepper. Incorporate all the ingredients well.
4. Make balls from the meat mixture and set aside.
5. In a saucepan heat the oil and add in the meatballs. Cook for few minutes and turn the side. Cook for another 4 minutes.
6. Pour in the tomato sauce and turn the heat on slow. Simmer for 15 minutes.
SERVING
7. Serve Meatballs with Squash Spaghetti and enjoy!
NOTE
These meatballs can be bake instead of fry. Bake the meatballs on parchment paper in a 425 degree oven for 20-25 minutes, then add to heated pasta sauce.
