Marvelous Minestrone

Hearty minestrone warms you to your toes...and it's a complete meal in a bowl!

Ingredients

Olive oil 1/4 Cup (4 tbs)
Garlic cloves 2 Medium , chopped
Onion 1 Cup (16 tbs) , chopped
Celery stalks 5 , chopped
Beef broth 6 Cup (96 tbs)
Canned tomato paste 12 Ounce
Carrots 2 , peeled and diced
Leeks 2 , chopped
Cabbage 2 Cup (32 tbs) , chopped
Potatoes 3 , peeled and diced
Dried rosemary 1 Teaspoon
Salt and pepper To Taste
Canned kidney beans. 15 1/2 Ounce
Elbow macaroni 3/4 Cup (12 tbs) , uncooked
For garnish
Parmesan cheese 1/4 Cup (4 tbs) , grated

Directions

MAKING

1. In a large pot over medium heat, heat oil and sauté garlic, onion and celery for about 5 to 7 minutes or until tender.

2. Add in broth, tomato paste, carrots, leeks, cabbage, potatoes, rosemary and seasoning, stir well.

3. Allow the vegetable mixture to come to a boil.

4. Reduce heat to low, cover and simmer for one hour, stirring occasionally.

5. Add in beans along with liquid and macaroni simmer, uncovered, for another 30 minutes, stirring occasionally, until macaroni is tender.

SERVING

6. Serve in warm soup bowl, and sprinkle Parmesan cheese on top.

TIPS

Serve with garlic toast for a hearty supper.
