Potato Gnocchi

You can make this potato gnocchi it has three main ingredients, 3 cups of flour, 2 pounds of potatoes, and 1 egg. This is a great way to use up left over cooked potatoes.

Ingredients

Eggs 1
Potatoes 2 Pound
Flour 3 Cup (48 tbs)
Salt To Taste
Butter 1 Tablespoon
Parmesan cheese 1 Tablespoon
Chives 1 Teaspoon , chopped finely

Directions

GETTING READY

1. In a stock pot, boil enough water to cover the potatoes.

2. Season with salt and add the potatoes.

3. Boil until they are fork tender.

4. Remove from heat and rinse in cold water and peel them.

5. Use a potato masher to mash them.

MAKING

6. Put the mashed potato on your flour dusted counter surface.

7. Add the egg, flour, salt and slowly get it incorporated with the potato. Mix by hand until you have a nice pliable ball of dough. Do not overmix.

8. Take a little amount of the dough and roll it out gently into an elongated strip about ¾ inch in diameter.

9. Score even slices all through the length of it.

10. Take individual pieces and use the fork to shape them as shown in the video.

11. Take a stock pot and boil about 6-7 cups of salted water.

12. Once it comes to a rolling boil, add the gnocchi and let them cook about 4 minutes. Drain them and set aside.

13. In a bowl, take about 2 cups of gnocchi.

14. Add the butter and Parmesan cheese. Mix it in.

SERVING

15. Garnish with chopped chives and serve right away.
