Mushroom Crostini with Mascarpone & Truffle Oil

This is a good hors doeuvre to have in your back pocket. Its quick elegant great all year round!


Baguette 1 Medium , sliced (or any kind of bread you like)
Olive oil 1/2 Tablespoon
Salt 1/2 Teaspoon
Mascarpone cheese 1/2 Cup (8 tbs)
Garlic 2 Clove (10 gm) , slivered
Fresh thyme 1 Teaspoon
Mushrooms 2 Cup (32 tbs) , sliced
Truffle oil 1 Teaspoon



1.Cut bread slices in half it the loaf is large. Drizzle with olive oil and toss to coat.

2.Arrange them on a baking tray and place in a hot oven. Toast at 400*F for about 6-8 minutes or until crisp.

3.In a saute pan heat olive oil and saute garlic until lightly brown and soft. Add mushrooms and saute with the garlic until soft and all the moisture has evaporated.Season with salt.

4. Remove toasted bread slices and spread mascarpone cheese on one side of each slice.

5.Spoon sautéed mushroom topping on each slice.


6.Arrange the crostini on a platter and drizzle truffle oil on each slice and sprinkle thyme for color.
