Low Carb Kale Frittata for Breakfast

This low carb frittata is so delicious and easy to make. Great for a quick low carb breakfast.


Eggs 6 Large
Heavy cream 1/4 Cup (4 tbs)
Ricotta cheese 1/4 Cup (4 tbs)
Black pepper 1/2 Teaspoon
Kosher salt 1/4 Teaspoon
Oil 1 Tablespoon
Butter 1 Teaspoon
Onion 1 Small
Garlic 1 Clove (5 gm) , minced
Kale 8 , cut into ribbons
Cheese 1/2 Cup (8 tbs) , shredded
Grape tomato 8



1. Preheat the oven to 350 degrees.

2. Remove stems of kale and keep the leaves in a bowl.

3. In a large bowl break the eggs.

4. Combine ricotta cheese, salt, pepper and heavy cream with the egg. Whisk for a few minutes.


5. Heat a pan over gas stove, pour oil and butter.

6. Sauté onion for a few minute.

7. Add garlic and kale, mix well. Cook for 3 minutes.

8. Pour the egg mixture over kale mixture. Cook for a few minutes over gas stove.

9. Top the egg mixture with tomato.

10. Sprinkle cheese on top.

11. Put the mixture in oven. Bake for 15 minutes.


12. Serve frittata in a plate for breakfast.
